Work
As President at IHS, I love leading our team and working with a large number of diverse clients. Since my days at Penn State University where I earned my Bachelor of Science in hotel, restaurant and institutional management, on-site food and hospitality has been my entire career focus. As an operator with Marriott Management Services and The Wood Company, I learned what it takes to be an effective operations manager. As VP of Dining & Hospitality Services at MBNA/Bank of America, I developed the leadership skills to manage global food service programs. Since 2006, I have been blessed to be able to lead our team in educating and inspiring clients across North America on how to transform their on-site food and hospitality programs to be best in class.
Life
Life is great! I never take even one day for granted. There is nothing better than spending time traveling the world with my wife Michele and our four awesome kids. It brings me great joy to witness my children’s journey from children to thriving young adults, making an impact on the world.
I love to spend time on the beach, fishing for striped bass and cheering on the Steelers. Creating delicious homemade pizzas in our back yard with friends and family, and enjoying great craft beer is always a weekend highlight at the Mundok house. Cheers!

The overall mission for my food/nutrition departments has always been to lead our community to improved health. My passion for food and nutrition started as I completed my Bachelor of Science in Dietetics with a concentration in Food Service Management from Ohio University. As a registered/licensed dietitian my first food service managers roles were at multiple senior living/nursing homes. I then transitioned to the acute care setting at University Hospitals. While working full time and having had twin boys, I decided I needed more of a challenge…I completed my Master of Business Administration in Healthcare. Upon completion of my MBA, I was then the Executive Director of Nutrition Services at Aultman Health an 804-bed hospital.
After over 20 years in healthcare food service management, I moved into a consulting role where I worked with Fortune 500 corporations (Google, Intuit, Alcon, Kimberly-Clark, Fiat-Chrysler, Walmart, Disney/ABC Studios, Halliburton, Capital One, USAA, Altria) as well as colleges/universities campuses. These clients were looking at ways to make food a positive employee/student benefit for recruitment/retention. I provided a continuous improvement program with an overall goal to serve more people who have a greater satisfaction, better and safer food at a lower cost. Understanding the data, translating, and teaching improvement to methods/practices to help my clients get a little better each day. During COVID many of my clients worked from home and food services were suspended.
At this point I pivoted becoming a US Foods Business Solutions Specialist. I was responsible for increase sales/case penetration and improved profitability in large health systems (Baptist Health, University Hospitals of Cleveland, Kettering Health, Henry Ford Health, The Ohio State University Wexner Medical Center, Carle Health, Baycare Health, McLaren Health, University of Louisville Health). The major focus was to implement action plans for improving efficiency and effectiveness, providing expertise in cost reductions methodologies and creative approaches to revenue enhancements for my customers.
Working for IHS allows me to utilize my skills from healthcare, college, business/industry, and vendor distribution to support the culinary teams to push boundaries by exploring ingredients and technologies as they strive to nourish the communities.
Life
My husband, Dan and I are blessed with twin boys, Parker and Mason. Our twins have both recently graduated from our alma mater Ohio University. We enjoy worldwide traveling, cooking/BBQ (smoking) new recipes, hunting for new bourbons or wines and riding our electric bikes. We are avid Cleveland sports fans – Browns, Cavaliers and Guardians. Dan and I became Dave Ramsey Financial Master Coaches at the end of 2023, to give back to our community and church members to help others become debt-free. Majority of the time you will find us enjoying family and friends on our back deck in Akron, Ohio with our dogs.

Since earning my Bachelor of Science degree in hotel, restaurant and institutional management from Penn State University, I have more than 15 years of leadership experience in the food & beverage industry. I’ve managed free-standing restaurants, banquet operations, hotels and contract food services. The majority of my career has been spent in the business dining sector, managing accounts for some of the nation’s largest banking institutions, including JP Morgan, Goldman Sachs and Capital One. My main focus with each of these accounts is innovation, pushing the boundaries of food service and never settling for the status quo. I love sharing my passion for and knowledge of hospitality and food service with others.
Life
I am a native of Puerto Rico and now reside in Dallas, Texas with my wife Sarah and my two daughters. A great part of my life revolves around being outdoors. In my free time, I love cycling and backpacking. The family and I love traveling, whether it be the mountains in Colorado or the beautiful beaches of Costa Rica. As an avid photographer, I love documenting all our travels. While not adventuring, I love to beat the Texas heat poolside with my family.

As a hospitality industry veteran, I have the unique opportunity to share my practical knowledge with our clients in my current role with IHS. This is extremely gratifying. Over my long career in the industry, being responsible for global and regional programs, I have had the distinct pleasure of collaborating with some of the finest professionals in the industry who share a common passion for food. At IHS, I work closely with clients who share a commitment to enhance the program they deliver to their colleagues and guests, while creating trusting and sustainable partnerships with their providers. As a Senior Associate with the IHS team for over nine years, I have managed projects of all types, sizes and levels of complexity within the business and industry, non-commercial sector and the higher education sector. I am a long-time active member of Society for Hospitality and Food Service Management (SHFM), and was the first recipient of the President’s Mentorship Award in 2022. One of the great benefits of my job is the opportunity to learn every day. I feel right at home and enjoy working in the field with clients in their corporate or campus settings. For me, this is the ultimate work experience.
Life
I am a lifelong resident of the Jersey Shore. I completed my bachelor’s degree in business administration and hospitality management at the University of Southern New Hampshire. I enjoy boating and fishing with family and friends. My amazing wife of over 40 years, Kathy, and I have two terrific daughters, Kaitlin and Heather, a granddaughter, Avery, and two wonderful sons-in-law. My wife and daughters are all educators. I love to travel and explore new destinations. One of the benefits of my career in the pharmaceutical industry was traveling to many locations within Europe, and North and South America. Closer to home, our family loves the Florida Keys, which is our home away from home. Spending holidays there over the years has been a highlight for all of us. In my spare time I have given back to my community as a volunteer firefighter for more than 35 years.

My career as an onsite dining professional has culminated with joining this great and accomplished team at Innovative Hospitality Solutions. Working for IHS checks all the boxes as I am a life-long learner, intensely curious, and enjoy working with clients and operators who share in the challenges of creating the best guest experiences possible. The ability to tour North America and travel as part of the job is just icing on the cake.
I began my career at Motorola Food Works, at the time the largest self-operating dining provider in the United States. I became the global client liaison for Dell Inc., and was then recruited by Nike to become the Director of Integrated Workplace Services, overseeing global locations and working with food service vendors in South America, Europe, and Asia.
In 2010, I was honored to be awarded the International Food Manufacturers Association (IFMA) Silver Plate Award for Business and Industry Dining. I was recognized for food service excellence in operations. I maintain and nurture close ties to our wonderful industry through the Society for Food Service & Hospitality Management (SHFM) and through the International Food Service Manufacturers Association (IFMA).
I had the honor to be the 2020 Hennessy/United States Air Force traveler for SHFM and the National Restaurant Association Education Foundation in 2020. I have a master’s degree in human nutrition from the University of Bridgeport, and a degree in food science and nutrition from Texas A&M University. I volunteer my time with the Texas A&M Former Students Hispanic Network, advocating for first-generation college students.
Life
I was born and raised a Texan, and fortunately, my work life has afforded me extensive travel throughout the U.S. and around the world. What I am truly grateful for the most is the knowledge that our children have turned out to be good people; we have four beautiful daughters whom we cherish, but don’t see enough of, and whom we love to the moon and back.
We take every opportunity to travel and see the world. When we’re home, we enjoy cooking, baking, and entertaining. We are grateful for our tapestry of family and life-long friends who are family to us. We enjoy biking the trails – anywhere and everywhere.

After earning my Bachelor of Science degree in Accounting from the University of Delaware, my accounting career began at Deloitte in northern New Jersey as an auditor. I soon made the transition into corporate accounting, holding accounting management positions at Bed Bath and Beyond Headquarters in Union, NJ and at Forrester Research in Cambridge, MA. I joined the IHS team in 2014, growing into my current role as Senior Administrator.
Life
Born and raised in a small town in southern Delaware, I loved the idea of living near a big city after graduating college. But after living near New York City and then in downtown Boston for several years, we moved back to a small coastal town in Delaware. We love our life here, but we also love to travel whenever we have any free time. However, free time is hard to come by currently, with four children involved in several school sports, as well as on travel/competition teams for various sports and dance. When we are not at a sports field or dance studio, we can be found on one of our favorite local Delaware beaches, enjoying a meal at one of our favorite local restaurants, or relaxing at home together with our beloved Cavapoo, Gracie.
